Summer Sweet Corn Relish

A sweet corn relish to accompany grilled fish and chicken.
Ingredients
  • 6 cups fresh sweet corn kernels
  • 3 cups chopped green cabbage
  • 1 cup chopped red bell pepper
  • 1 cup apple cider vinegar
  • ½ cup brown sugar
  • ½ cup chopped shallots
  • 2 teaspoons mustard seed
  • 1 teaspoon tumeric
  • 1 teaspoon cumin seed
  • ½ teaspoon kosher salt
  • 1-2 pinches cayenne pepper
Instructions
  1. Combine all ingredients in a large, heavy-bottomed pot, such as a Dutch oven. Bring to a boil, then reduce heat to a simmer.
  2. Cook, uncovered, for about 30 minutes, until vegetables are tender and most of the liquid has been reabsorbed by the vegetables.
  3. Cool, then store in fridge in a covered container.
