A Fruity Summer Salsa

Serves: 1 cup
- 1 cup fresh apricots, pitted and roughly chopped
- 1 cup cherry tomatoes, halved
- ¼ cup fresh cilantro, chopped
- 1 small shallot, finely chopped
- ½ jalopeno pepper, finely diced
- 2 tablespoons Meyer lemon juice
- 1 tablespoon California olive oil
- ¼ - ½ teaspoon sea salt
- 1 pinch ground cumin
- 1 pinch ground coriander
- 1 pinch cayenne pepper
- Combine all ingredients in a bowl. Cover and refrigerate up to 8 hours before serving.
- Allow salsa to come to room temperature or microwave 30 seconds just before serving.
