Sunshine Market Salad

A simple salad, inspired by the produce in Kauai's "Sunshine Markets".
Ingredients
  • Vinaigrette:
  • 2 Tablespoons fruity olive oil
  • 1 Tablespoon fresh lime juice
  • 1 Tablespoon fresh mango and/or pineapple juice
  • 1 pinch sea salt
  • 1 pinch ground white pepper
  • Salad:
  • 3 cups organic lettuce, torn into bite-sized pieces
  • ½ cup fresh mango, chopped
  • ½ cup fresh pineapple, chopped
  • ½ cup cherry tomatoes, halved
  • 1 scallions, chopped, white and light green portions only
  • 2 Tablespoon unsalted, toasted macadamia nuts, chopped
  • 1 Tablespoon fresh mint, chopped
Instructions
  1. Whisk together all ingredients for the vinaigrette and set aside.
  2. Assemble all the salad ingredients in a medium-sized bowl.
  3. Add the vinaigrette, toss and serve promptly.
