Here-Comes-Fall Fig Chutney

Serves: 6 8-ounce jars
 
A seasonal fig chutney.
Ingredients
  • 3 cups brown sugar, lightly packed
  • 2 cups apple cider vinegar
  • 2 pounds fresh figs, stemmed and chopped
  • 1 pound dired figs, stemmed and chopped
  • 1 large onion, chopped
  • zest and juice of 1 lemon
  • ¼ cup crystallized ginger, finely chopped
  • 1 Tablespoon pomegranate molasses
  • 1 Tablespoon mustard seed
  • 1 teaspoon grated fresh ginger root
  • 1 teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ¼ teaspoon cayenne pepper
Instructions
  1. Combine the sugar and vinegar in a large, heavy-bottomed pot. Heat, stirring, until sugar dissolves.
  2. Add remaining ingredients, bring to a boil, then reduct heat to low. Cook, uncovered, stirring on occasion, for 2 hours.
  3. Pour into sterile jars and seal according to safe canning procedures.
  4. Store in pantry up to one year.
