Here-Comes-Fall Fig Chutney

Serves: 6 8-ounce jars
- 3 cups brown sugar, lightly packed
- 2 cups apple cider vinegar
- 2 pounds fresh figs, stemmed and chopped
- 1 pound dired figs, stemmed and chopped
- 1 large onion, chopped
- zest and juice of 1 lemon
- ¼ cup crystallized ginger, finely chopped
- 1 Tablespoon pomegranate molasses
- 1 Tablespoon mustard seed
- 1 teaspoon grated fresh ginger root
- 1 teaspoon ground cumin
- ½ teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- ¼ teaspoon cayenne pepper
- Combine the sugar and vinegar in a large, heavy-bottomed pot. Heat, stirring, until sugar dissolves.
- Add remaining ingredients, bring to a boil, then reduct heat to low. Cook, uncovered, stirring on occasion, for 2 hours.
- Pour into sterile jars and seal according to safe canning procedures.
- Store in pantry up to one year.
