Pineapple - Meyer Lemon Margarita

We are off to Kauai next week, so a summer cocktail seemed a great start to the weekend. I like to serve a fruity drink to set a party mood for any summer dinner party.

This pineapple – Meyer lemon margarita is based on Ina Garten’s “Pineapple Margarita” recipe. All I did was substitute Meyer lemons from our tree for the expensive limes in the grocery store. (When did limes get so expensive?)

These margaritas are pretty potent, so I prefer to serve them over ice. Chilled martini glasses are fine, though.

Because Larry and I eat a low sodium diet, I did not dip the edges of the glasses in lemon juice, then twirl them in a saucer of kosher salt – but you go right ahead.

TIP: If you don’t want to buy a whole pineapple like I did, you might find small cartons of fresh pineapple in the refrigerated portion of your market’s produce section.

A fresh pineapple margarita substituting Meyer lemon juice for traditional lime juice.
Ingredients
  • 1 cup Meyer lemon juice
  • 1 cup white tequila
  • 1 cup Triple Sec
  • 1 cup fresh pineapple juice
  • fresh pineapple chunks (optional garnish)
Instructions
  1. Combine the Meyer lemon juice, tequila, Triple Sec and pineapple juice in a large pitcher.
  2. Fill a cocktail shaker ½ full with ice, add the margaritas, cover and shake for 30 seconds.
  3. Pour into glasses over ice, garnish with pineapple chunks and serve.
