Avocado & Pink Grapefruit Salad

As I’ve mentioned before, we get bored with green salad night after night. Looking around the kitchen earlier today, I became inspired by a pile of ripe avocados and a huge pink grapefruit.

This salad can be made in about five minutes and is a refreshing change from the usual greens and raw vegetable combination that I serve.

Feel free to add some scallion if the red onion doesn’t suit – or maybe some chopped, crisp English cucumber.

Avocado & Pink Grapefruit Salad

A fresh, fruity salad based on seasonal ingredients.
Ingredients
  • Vinaigrette:
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh pink grapefruit juice
  • ¼ teaspoon finely grated pink grapefruit zest
  • 1 pinch sea salt.
  • Salad:
  • 1 ripe Haas avocado, peeled and pitted
  • ½ pink grapefruit, cut into sections and membrane removed
  • ¼ cup celery, chopped
  • 1 tablespoon red onion, finely chopped
  • 1 handful baby greens, washed
Instructions
  1. Whisk together vinaigrette and set aside.
  2. Combine avocado, grapefruit, celery and red onion. Toss with vinaigrette.
  3. Arrange greens on 2 salad plates. Top with dressed salad. Serve.

    Love that combo of avos and grapefruit! Chives would be nice in there, too. Maybe some toasted pine nuts on top? Mmmmm…I am playing with it in my mind.

    Avocado and grapefruit are a great combination and make for a delicious and refreshing salad, you are so right it’s easy to tire of the standard salad fixings. This is a lovely change. Sounds like a fun challenge also.

    I love this salad. I have made it for a brunch buffet as well as an accompaniment to a Mexican feast. It tastes great with spicy food. It always gets a few wows for presentation alone. Thanks for reminding me about this.

    Creamy avocado pairs so beautifully with citrus – especially grapefruit which is my fave, in cocktails and otherwise. Hubs can’t eat them because they interfere with statins, as Carol pointed out.

      Boy, I had not known that about statins and will tuck away, in case I have guests on statins – and my husband! Larry’s a retired physician and this was news to him as well.

      You were definitely down with flu then – someone suggested pairing it with spicy food – I loved the idea.
